I made a resolution earlier this year to try to cook dinner at least 3 times a week. However, thanks to our busy schedules and a whole load of inertia on my part, I've yet to reach that goal. It doesn't help that my mum is a pretty decent cook and sometimes cooks dinner for all of us, or that it's easy to eat out in Singapore...
So anyway, with the exams looming up (and with it, the drive to do anything BUT study), I tried my best to cook more often and managed to hit my goal of 3 dinners this week. Of the remaining 4 dinners, the hubby cooked Ramly burgers once, we ate out once with my parents (to celebrate their wedding anniversary), and my mum cooked twice when the hubby wasn't around (either he was on call, or at church).
I managed to try recipes I've never done before (I'm a pretty terrible cook and usually stick to easy dishes like pasta), so I must say its quite an achievement for me! This was what I churned out:
Tuesday: Couscous, with sweet potato and carrots. Unfortunately, it turned out that the hubby absolutely hates the smell of cumin, so though I found it quite alright, he didn't finish his dinner.
Thursday: Spaghetti and prawns tossed with laksa and cashew nut pesto (which I learnt during our recent cooking party), along with herbed baked vegetables (shitake mushrooms, potatoes, carrots). The baked vegetables recipe was something I modified from Jamie Oliver's cookbook. Both my parents joined us for dinner and we finished everything! The hubby liked the pesto, but thought it could be spicier...
Friday: Fish curry (with ladies fingers, tomatoes and cabbage), served with rice. Ahh, this one I made from a pack... :p It was easy to cook, and the hubby loved it... but thought it could be spicier (the man is only happy when his food is so spicy that its burns your tongue off!).
Hopefully, this would be the start of more home-cooked meals from me... *fingers crossed* Am planning to bake muffins and bread tomorrow, if all goes well...

Ah yes, cooking dinner with a baby and everything else is so hard! I just recently started cooking dinner almost every night and at least once a week I swear that I'm never going to cook dinner again! I hope your hubby appreciates your hard work! Oh, and my Mom says that cumin smells like dirty under arms. Maybe that's why your hubby doesn't like the smell of it. :)
