The kids love cheese, but we've been getting a little tired of the usual cheese sandwiches (which we've been eating a lot since we have co-ops to attend twice a week). So I've been trying to make our own spreads, and the kids love this version with sun-dried tomatoes. I was taught how to make this when we were staying in Germany, and its really easy to make! The spread is savoury and sweet, with a tang of tomatoes, and hubs and I love the extra kick from the chilli.
Ingredients:
7 dates, pitted
6 sun-dried tomatoes
1 small onion
1 large chilli
Cream cheese, 200g
Steps:
1. Add dates, tomatoes, onion and chilli into the blender/food processor. Blend.
2. Add cream cheese, and blend to mix. And that's it! (I told you it was easy!)
Since the kids can't really take spicy food, I usually omit the chilli when preparing the spread. I then scoop out half of the spread into a container, and then blend the chilli into the remaining spread inside the blender. It does mean the chilli might turn out a little chunkier than the other ingredients, but we're fine with it.

I didn't know what to do with my jar of sun-dried tomato except in salads and pasta. This sounds yummy!
